Original recipe yields 1 serving
1 1/2 cups sugar
1 cup water
6 tablespoons cornstarch
4 cups rhubarb, chopped
1 can cherry pie filling
2 unbaked pie crusts
1 stick butter/margarine, softened
1/2 cup brown sugar, packed
1 cup flour
1 1/4 cups oatmeal

Preheat oven to 350°F. Boil sugar, water and cornstarch until thick. Add rhubarb and pie filling. (May add a drop of red food coloring for appearance.)

Pour half mixture into each unbaked pie crust. Cut together butter, brown sugar and flour as in preparing a pie crust. Add oatmeal and stir. Put mixture on top of each pie before baking.

Bake until the topping is brown and crisp and the rhubarb is done, approximately 40 minutes.
