Original recipe yields 1 serving
2 cups cooked chicken (cubed or shredded)
2 cups cooked rice
1 can (10 oz.) cream of chicken soup
1/3 cup mayo or sour cream
1/2 cup milk
1 small onion, chopped
1 cup frozen peas
1 tomato, chopped
2 cups shredded cheddar cheese, divided
Salt and pepper to taste

1. Cook chicken any way you want or use leftovers. Cook rice any way you like or use leftovers. Instant or Minute Rice is great.

2. Combine soup, mayo/sour cream, milk, onion, peas and tomato in a medium sized bowl. Fold in the chicken, rice and 1 cup of the cheese. Salt and pepper to taste.

3. Pour into a medium sized baking dish and top with the last cup of cheese.

4. Bake 25-30 minutes on 350°F uncovered.
