Chop tomatoes, sun-dried tomatoes, roasted red peppers, basil, parsley & garlic. Marinate in bowl with olive oil for at least 2 hours, can be made a day ahead.
Shred mozzarella cheese, set aside. Roll dough into 10-12" pie (make sure size is appropriate to fit your grill). Brush one side with olive oil & place oil side down on hot grill. Brush up side with olive oil. Grill for about 3-5 minutes or until golden brown.
Flip dough, immediately top with tomato/red pepper mixture & cheeses. Grill another 5 minutes or until cheese is melted. Let cool 2-3 minutes before cutting.
