Original recipe yields 1 serving
2 Tbsp flour
1/2 tsp salt
1/4 tsp pepper
1 lb chicken breast, cut into bite size pieces
2 Tbsp oil
1/2 lb sausage, cut into bite size pieces
1 Tbsp onions, minced
2 stalk s celery, minced
1 green pepper, chopped
2 cloves garlic, minced
1 can (16 oz.) tomatoes, diced
1/4 cup water
2 Tbsp tomato paste
2 Tbsp Worcestershire sauce
1 tsp thyme
1/2 tsp salt
1 bay leaf
1/4 tsp Tabasco pepper sauce
1/2 lb shrimp, peeled and deveined

Combine flour, salt and pepper in a plastic bag. Add chicken pieces to coat. Heat oil in skillet. Brown chicken. Remove and drain on a paper towel.

Add sausage to pan and cook 10 minutes. Remove and drain on a paper towel.

Drain all fat except 2 Tbsp. Add onion, celery, green peeper, and garlic. Cover and cook over medium heat stirring occasionally for 30 minutes.

Stir in tomatoes, water, tomato paste, Worcestershire sauce, thyme, salt, bay leaf and Tabasco. Return chicken and sausage to pan. Cover, stirring occasionally for 20 minutes. Add shrimp and simmer 15 minutes. Remove and discard bay leaf. Serve over rice (generally 2 cups rice needed).
