1/2 cup butter
1 cup plus 2 Tbsp. flour, divided
1/4 cup confectioners' sugar
2 eggs, slightly beaten
1 cup granulated sugar
3 Tbsp lemon juice (Real lemon juice...1 lemon=1 Tbsp.)
1/4 tsp salt
Grated rind of 1 lemon (this can be one that gets juiced)

Mix together butter, 1 cup flour and confectioner’s sugar. Put in an 8-inch square pan and press with fingers to form an even layer of crust. Bake 15 minutes at 350°F.

Mix eggs, granulated sugar, lemon juice, salt, remaining flour and grated lemon rind. Pour over hot crust. Bake 20 minutes.

Sift confectioners' sugar over lemon bars when cooled.
