Original recipe yields 1 serving
1 can (8-oz.) pineapple rings in juice
1/4 tsp liquid smoke
1 tsp sea salt
1 tsp curry powder
2 Tbsp good dark rum
1 Tbsp Worcestershire sauce
1 Tbsp Key Lime juice
2 Tbsp molasses
1 tsp green pepper sauce
4 large pork chops

Remove pineapple rings from juice. Whisk together all the ingredients with the pineapple juice for the marinade. Cover pork chops with the marinade and refrigerate for 4 hours.

Remove chops from marinade. Pour marinade into a small sauce pan and bring to a boil, stir, and drop heat to low and simmer.

Grill chops for 10 to 15 minutes occasionally turning. The last few minutes of cooking put the pineapple rings on the grill just to get the grill marks. Place the rings on top of the pork chops and pour on the marinade.
