Heat oil in large skillet over medium heat. Chop onion and bell pepper into 1/4" - 1/2" pieces and add to skillet. Slice yellow squash & zucchini squash into 1/8" slices and add to skillet. Cover and let stew stirring occasionally. Stir in Nature's Seasonings.
Slice sausage into 1/8" slices and add to skillet. Let stew for a total of 15 - 20 minutes stirring occasionally. Chop tomatoes in half but do not add at this time.
When vegetables are tender, remove from heat and add chopped tomato. Serve over rice or all by itself.
