Original recipe yields 1 serving
1 lb ground beef
1 onion, chopped (I use a chopper to dice onion quickly)
1 can kidney beans, drained
2 or 3 tomatoes, cut into wedges
1/2 bag tortilla chips, crushed
1 head of lettuce, cleaned and torn into bite size pieces
1 cup grated cheddar/Colby cheese
Dressing:
1 can (7 oz.) green chili salsa (if you can't find this than use equal amount of regular salsa)
2 cups real mayonnaise (no substitutions- doesn't work with this recipe)

Let's Make It

Brown ground beef and onion and then drain off grease. Add drained can of kidney beans to meat mixture. Let this cool.

Meanwhile, combine dressing ingredients. Cut up tomatoes and crush tortilla chips.

Once meat mixture is cooled, combine all ingredient, mix and serve immediately. (Except dressing if taking to a potluck and then don't add it till ready to serve.)
