Combine first 5 ingredients, spread sauce on bread.
Layer the corned beef and sauerkraut on 4 slices of the bread, and top with the cheese. Cover with the remaining bread, and spread with 1 tablespoon butter in a large nonstick frying pan over medium heat.
Add sandwiches, unbuttered side down, and fry till golden. Turn and brown the other side.
