Peel potatoes for desired amount of people you will be serving, cut into bite size chunks. Place in microwaveable bowl with a dash of water to keep moist.
Cover with microwave lid and cook until potatoes are almost tender, anywhere from 5 - 10 minutes.
When almost fork tender, add Velveeta Cheese cut up in chucks and ham chucks. Microwave until melted and heated through. Salt and pepper to taste. Garnish with chopped green onion. Green bell pepper may be added to given additional flavor and color. Cook until desire doneness. I prefer mine a little crunchy.
