Quarter potatoes after peeling and washing thoroughly. Boil till slightly tender. Drain.
Layer potatoes in bottom of a 9x13-inch glass casserole pan. If onion is desired place it on potatoes. Pour 3 cans of golden mushroom soup over potatoes/onion. Place thawed pork chops on top of potatoes. Pour two cans of golden mushroom soup over pork chops.
Bake about an hour at 350 degrees F depending on your oven. You want the pork chops to be done and potatoes to be tender.
