1. Grease a 9x13x3 inch loaf pan. In mixing bowl, combine flour, baking powder, salt and nutmeg. In another bowl, combine eggs, sugar, eggnog, butter, vanilla, and rum extract. Add to dry ingredients. Stir until just moist, batter should be lumpy.
2. Spoon into prepared pan.
3. Bake 350 degrees F for 40 - 45 minutes or until wooden toothpick inserted in center comes out clean. Cool on a wire rack for 10 min. Remove bread from pan: cool on the wire rack. Wrap and store overnight before slicing.
