In the slow cooker put chicken broth, vegetables and 1/4 of the tomato sauce. In a large mixing bowl combine ground turkey, rice, and parsley, another 1/4 of the tomato sauce, salt and pepper to taste.
Cut the tops of the peppers of and stuff the peppers with the turkey and rice mixture. Place the stuffed peppers in the slow cooker on top of the vegetables and cover the peppers with the cut of tops. Pour the remaining 1/2 of the jar of tomato sauce over the covered peppers.
Cook for about 4 hours.
