2 medium eggplants (about 8" long)
Salt
1 lb turkey sausage
1 large onion, chopped
4 servings Stove Top Stuffing, prepared
1 cup shredded mozzarella cheese

Cut eggplant in half lengthwise. Scoop out pulp of each eggplant half. Chop and sprinkle with salt to prevent darkening. Steam eggplant halves for about 20 min. Cool.

Brown turkey sausage and onion till done. Mix chopped eggplant, prepared stuffing, cheese and sausage mixture. Mix well and stuff each eggplant half with mixture.

Bake at 350°F for 30 minutes.
