Original recipe yields 1 serving
1/2 lb Andouille sausage
Blackening seasoning to taste
1 clove garlic, chopped
1 onion, chopped
1 each red, green and yellow bell pepper, chopped
2 cups Minute Rice
1 can stewed tomatoes
1 can chicken broth
1/8 cup Cajun seasoning
Hot pepper sauce to taste
1 package pre-cooked frozen shrimp (thawed)

In large skillet brown sausage with blackening seasoning, garlic and onion.

When sausage is browning, add all the chopped peppers and saute. Add rice, can of tomato, chicken broth, Cajun seasoning and hot pepper sauce (as much as you can handle).

Cover and simmer over medium heat 25 minutes or until rice is cooked through and liquid is absorbed. In last 5-8 minutes of cooking add shrimp (thawed) and cook until pink.
