Brown meat in large skillet or Dutch oven, adding onion if you prefer them cooked.
Stir in water, corn, Zatarain's and the macaroni from the Kraft package. Bring to a boil. Reduce heat to med-low, cover, and simmer 5 to 10 min. or until macaroni is tender, stirring 2 or 3 times to keep macaroni from sticking.
Add onion (if not cooked in), chili, and the cheese sauce packet. Mix well and cook 2 min. more, or until heated through.
Ladle into bowls and sprinkle with shredded cheese.
