My Shepherd’s Pie

Original recipe yields 1 serving
1 lb bacon
2 lb ground turkey or beef
5 lb russet potatoes for mashing
4 big carrots
6 ribs celery
2 small bell peppers any color
1 container chicken stock or broth
6 Tbsp flour (approx.)
2 Tbsp paprika
2 Tbsp thyme
Salt and pepper, to taste
1 1/2 container s sour cream
Butter
Chives
1 egg, well beaten

Slice bacon about one inch apart and cook in a pan then drain. In the same pan add browned and drained beef or turkey. You want to cook all ingredients in the pan the bacon was cooked in to add flavor so make sure to cook the bacon in a LARGE pan.

Put skinned and cubed potatoes in pot and boil until soft. Slice carrots into small circles and celery into small pies too. While potatoes are cooking add all vegetables into meat mixture. Add some chicken stock to the mixture until vegetables almost float. Cook down mixture until there is almost no liquid.

Sprinkle over mixture some flour until a rue forms, kind of like a gravy. Now sprinkle paprika, thyme, and salt and pepper over mixture. Add 1/2 a container of sour cream to meat mixture if the mixture isn't too runny add 1/4 more.

Once the potatoes are done drain, saving a little hot water to the side, and then mash them adding the rest of the sour cream and some butter. Cut some chives to taste into potatoes. Take the well beaten egg and add some of the hot water to it to temper it before mixing it into the mashed potatoes.

Put meat mixture into big casserole dish, (lasagna pan possibly two). Cover mixture with as much mashed potatoes as will fit. Scrape the top of the potatoes with a fork.

Put under the broiler for up to 20 min. until the potatoes start to turn a golden brown color. Once done sprinkle paprika on the pie and snip a few more chives.
