Olive oil
1 Vidalia onion, sliced
1 lb Yukon gold potatoes, sliced thinly, or cubed
Salt and pepper
5 tsp Caribbean jerk seasoning
1 package kielbasa, sliced into 1/4 inch pieces

Heat olive oil in pan. Add sliced onions and cook until soft. Add sliced potatoes. Add salt, pepper, and Caribbean jerk seasoning to taste.

Once potatoes are slightly browned and almost fully cooked, move ingredients in pan to one side, and add kielbasa to empty side. Cook long enough for kielbasa to brown slightly.

Mix ingredients all together and cook until potatoes are fully cooked, (about 5-10 more minutes).
