Original recipe yields 1 serving
1 ripe acorn squash
1/2 lb bulk sausage
1 med onion
1 clove garlic
1 celery stalk
1 Tbsp extra virgin olive oil
1/2 cup golden raisins
1 Tbsp fresh poultry herbs or 1 tsp. poultry seasoning
2 Tbsp butter
8-10 Ritz Crackers

Preheat the oven to 400 degrees F. Split the squash in half and scoop out the seeds. Fill a baking dish with 1/2 inch of water and place a cooling rack in baking dish. Place squash halves flesh side down on cooling rack and bake for 1 hour.

Meanwhile, brown sausage in a large skillet. Chop onion, garlic, and celery. Drain sausage. Add olive oil to pan and saute onion, garlic, and celery in pan on med heat until soft. Add raisins. Add sausage and herbs or seasoning. Remove from heat.

In a small saucepan melt the butter. Crush Ritz Crackers into crumbs. Add Ritz crumbs to melted butter and coat thoroughly. Remove from heat.

Take squash out of oven and place with the cavity facing upwards. Fill each squash with the sausage and vegetable filling. Top with Ritz crumbs. Put back in oven on a cookie sheet for 20 minutes to brown. Enjoy!
