Crust:
1 cup flour
2 Tbsp sugar
1/2 cup butter
Pinch of salt
Filling:
4 cups rhubarb, diced
3 beaten eggs
2 cups sugar
4 Tbsp flour
3/4 cup heavy whipping cream
Meringue:
3 egg whites
5 Tbsp sugar

Mix crust ingredients together. Pat into a 9 x 13 cake pan. Bake for 10 minutes at 325 degrees F.

Mix filling ingredients together in large bowl and pour over baked crust. Bake for 45 minutes at 325 degrees F.

Beat meringue ingredients together with mixer until stiff. Spread on top of rhubarb and bake until meringue is brown.
