1 leg of lamb (6 lb.)
2 Tbsp olive oil
6 cloves garlic
1 Tbsp fresh rosemary leaves
1/2 Tbsp thyme
1 tsp black pepper
1 tsp lemon juice

Preheat oven to 450 degrees F. Coat lamb with olive oil and then mix all ingredients except lemon juice, and coat the lamb with the ingredients.

Place in large roasting pan, sprinkle with lemon juice. Place pan on the lowest rack.

Roast lamb for 1 1/4 hrs. to 1 1/2 hrs. depending on doneness wanted. 145 degrees is med. rare. After removing lamb from oven, let rest in pan for 20 to 30 min.
