Original recipe yields 1 serving
2 cups whole wheat flour
2 tsp baking powder
1/2 cup natural sugar (demerara cane sugar)
1 tsp cinnamon (or more per preference)
1/2 cup raisins
1 cup soy milk
1 egg
3 Tbsp canola oil
1 large (or 2 small) ripened bananas

Mix all dry ingredients together in large bowl (including raisins). Add liquid ingredients (including egg & mashed banana). Stir gently until evenly mixed (do not over stir).

Place in muffin papers in muffin pan.

Bake at 375 degrees F for 15 minutes. Enjoy!
