Original recipe yields 1 serving
For crust (rolled sugar cookie recipe):
3/4 cup whole-wheat flour
3/4 cup unsifted cake flour (all-purpose will work)
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons 50/50 unsalted butter for baking
1/2 cup sugar
2 tablespoons canola oil
1 large egg
1 1/2 teaspoon s vanilla extract
Toppings:
1 container (8 oz.) whipped cream cheese
2 medium tangerines, peeled and sliced into wedges
4 medium kiwi fruit, peeled and sliced
1/2 cup blueberries
1 cup strawberries, hulled and sliced
2 Tbsp all natural apricot fruit spread
1/4 tsp allspice
1/8 tsp cinnamon

Pizza:

Set a rack in the upper third of the oven; preheat to 350°F. Coat 2 baking sheets with cooking spray.

Whisk whole-wheat flour, cake flour, baking powder and salt in a medium bowl.

Melt butter in a small saucepan over low heat. Cook, swirling the pan, until the butter turns a nutty brown, about 1 minute, and pour into a mixing bowl. Add sugar and oil; beat with an electric mixer until smooth. Mix in egg and vanilla; beat until smooth. Add the flour mixture and mix on low speed until just combined.

Roll dough on a lightly floured pizza pan to a thickness of 1/8 inch.

Bake the cookie in the upper third of the oven, 1 sheet at a time, until slightly golden on the edges, 5 to 7 minutes. Do not overbake. Transfer to wire racks to cool.

Assembly:

After the cookie has cooled, evenly spread the cream cheese over the top but not quite to the edge. Start in the center of the pizza and layer the tangerine slices in a ring. Overlap the kiwi slices in a ring around the tangerines. Line the blueberries in a single ring around the kiwi. Lastly, lay the strawberry slices next to each other all the way around the perimeter of the pizza.

Heat up the fruit spread and stir in the spices. Brush evenly over the fruit and chill in refrigerator before slicing into 8 wedges.
