Cut up chicken into 1/2 or 1inch pieces Mix together flour and Cajun seasoning. Heat skillet to medium with oil in frying pan. Dip chicken pieces into egg, coating all sides, then covering with flour mixture. When sprinkled, if flour mix sizzles in pan, it is ready.
Place floured chicken into skillet until browned.
After, place on plate with 2 paper towels on it. The paper towels remove excess grease, allowing the chicken to be crispier.
