Wash and dry potatoes; slice into 1/4" 'chips', discarding the ends of potatoes.
Place in a glass casserole dish with water. Microwave, uncovered, 6-8 minutes. When tender to pierce, drain off the excess water and let the potatoes set 1-3 minutes.
Add plenty of shredded cheese; garnish with other desired toppings. Dallop each serving with sour cream.
