1 medium potato, either red skin or baking variety
1 cup romaine lettuce, chopped
1 cup mixed lettuce, such as red and green leaf varieties or a spring mix, chopped
1/2-1 cup baby spinach
1/4 cup salad tomato, cut into wedges
1/4 cup carrot, sliced
1/4 cup cucumber, sliced
1/8 cup avocado, cubed
1/2 cup roasted red bell pepper, cut into strips
1 hard boiled egg, shelled and sliced
1/2 cup healthy sauteed leeks
2 oz natural smoked salmon
2.5 Kalamata olives, chopped
3/4 oz reduced fat feta cheese
Tbsp 1 to 1.5 extra virgin olive oil
Juice from a wedge of fresh lemon
A pinch sea salt
A few grinds of black pepper
Garlic clove, minced

Let's Make It
Cube potato and steam for approximately 10 minutes. Remove from steam basket and set aside.
Toss lettuce and spinach together in the bottom of a good sized bowl. Place the next 7 ingredients along with the potato around the sides of the bowl. Put the smoked salmon on top of the leeks in the center and sprinkle on olives and cheese.
Whisk together the dressing and drizzle over the top. Enjoy!!
