1 tsp olive oil
1/2 cup onion, chopped
1 clove garlic, minced
1 can (29 oz.) tomatoes, chopped
1 can (15.5 oz.) chickpeas, drained
1 tsp parsley flakes
2 oz cheddar cheese, shredded

Prepare couscous according to package directions. Set aside.

Saute onions and garlic in olive oil, until onions are clear. Add tomatoes, chickpeas and parsley. Continue cooking until heated through.

Fluff up couscous and add to chickpea mixture. Stir well. Add cheddar cheese and stir well.
