Preheat oven to 400 degrees F. Spray baking sheet or mini cupcake pan with fat free cooking spray. In a food processor or chopper, chop imitation crab meat, onion, and scallions until minced. In a mixing bowl, combine minced crab, onions, scallions with cream cheese. Stir in sugar (optional).
With tablespoon, spoon crab mixture into center of wonton wrapper. Pinch 4 corners to center and place on baking sheet. When sheet is full, lightly spray tops of crab rangoons with cooking spray.
Bake for 10 minutes or until lightly browned. Serve hot.
