Original recipe yields 1 serving
1 lb ground beef or ground turkey
1 large onion, chopped
1 can (14.5 oz.) diced tomatoes with basil, garlic, and oregano
1 can (6 oz.) tomato paste
1/2 cup water
12 oz uncooked penne pasta (prepare according to directions on box)
3 cups (12 oz.) mozzarella cheese, divided

Cook meat and onion in large skillet until meat is crumbled and no longer pink; drain. Stir in diced tomatoes, tomato paste, and 1/2 cup of water. Season to taste; heat through.

Coat 13x9x2 inch baking dish with cooking spray. Combine cooked pasta with meat and tomato mixture, and 2 cups cheese. Pour unto baking dish; top evenly with remaining cheese.

Bake uncovered in a preheated 350 degrees F oven for 20 to 25 minutes or until heated through and cheese is melted.
