4 cups high fiber cereal (13 gms or more per serving)
1 cup warm water
1 cup applesauce (unsweetened)
2 eggs
1/2 cup brown sugar substitute
1 cup old fashioned oatmeal
1/3 cup raisins
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ground ginger
1 cup all-purpose flour

Preheat oven to 400 degrees F. Line 12 muffin tins with papers or spray with non-stick cooking spray.

Pour warm water over cereal in a large bowl. Add apple sauce, eggs, brown sugar, oatmeal and raisins. Stir well. Add baking soda, cinnamon, ginger and flour. Stir until combined. Divide evenly among 12 muffin tins.

Bake in preheated oven for 15-20 minutes or until done.
