Saute zucchini and onion in butter. Stir in soy sauce, salt and oregano. Remove from heat and set aside. Whip cottage cheese, eggs and mayo and stir in flour and parsley.
Layer zucchini and onions alternately with cottage cheese mixture. Top with tomatoes. Sprinkle cracker crumbs, cheddar cheese and parmesan over top.
Bake at 350°F for one hour.
