Melt butter in microwave in glass bowl, let cool. Beat in eggs and slowly stir in cake mix. Mix in cherry preserves and coconut.
Line baking sheet with parchment paper, scoop out dough with melon baller or cookie scoop, and place two inches apart.
Bake at 350°F for 10 minutes. Take cookie sheet out of oven, slide parchment paper off onto cool surface to cool cookies. Lift off to plate or container, these are VERY moist cookies!
