1/4 cup oil
1 large onion, chopped
4 cloves garlic, minced or finely grated
1/4 cup lightly roasted pine nuts or slivered almonds
1/2 cup raisins
1/2 cup chopped parsley, or 1/4 cup dried
Juice of 1 medium lemon (about 3 Tbsp.
2 Tbsp balsamic vinegar
1 large bunch spinach, collards, or chard, washed and chopped
1 Tbsp dried dill weed
2 tsp dried thyme
1/2 tsp ground cinnamon
3/4 tsp ground allspice
1/2 tsp paprika
Sea salt and pepper to taste
2 cups cooked brown rice

Preheat oven to 350°F. In a large pot or Dutch oven, heat oil over medium-high heat. Add onions and garlic and sauté until onion is golden brown, around 10 minutes.

Add remaining ingredients except for rice and stir well. Turn heat to minimum, cover, and let simmer for about 5 minutes to combine flavors and allow greens to wilt. At this point you could add some chopped cooked meat. Add rice and mix well.

Turn the mixture into a greased casserole and bake until heated through, about 20 minutes.
