Original recipe yields 1 serving
3 whole eggs
3/4 cup oil
1 1/2 cups sugar
1 tsp lemon peel
1/2 tsp orange extract
1/4 tsp vanilla
2 cups grated zucchini
2 1/2 cups flour
3/4 tsp salt
1/2 tsp cinnamon
1/4 tsp ginger
1 tsp baking soda
2 tsp baking powder
1/2 cup chopped nuts

Beat eggs. Add oil and sugar and beat well. Add flavorings and zucchini and beat again. Mix dry ingredients together. Stir into egg mixture. Add nuts and mix well.

Pour into small loaf pans.

Bake at 350 degrees F for 1 hour. Cool in pans.
