Original recipe yields 1 serving
8 oz kielbasa, sliced into 1/2" thick rounds
2 Tbsp olive oil
2 cups onions, chopped
1 cup celery, chopped
1 cup red bell pepper, chopped
1 lb medium shrimp, peeled and deveined
2 tsp garlic, minced
4 cups chopped tomatoes or 2 cans (14-oz. each) diced tomatoes
2 cups cooked white rice
2 tsp Tabasco, or to taste

Brown kielbasa in oil for about 3 minutes.

Stir in onions, celery, and bell pepper. Saute for 5 minutes.

Add shrimp and garlic; cook for 3 minutes more, stirring constantly.

Stir in tomatoes and rice; cook 3-4 minutes to heat through. Season with Tabasco, salt, and pepper.
