2 acorn squash, halved
1 pound sausage (mild or hot)
1/2 cup finely chopped onion
1/2 cup chopped celery
1 medium apple, peeled and grated
1/2 cup sour cream
1 egg, beaten
1 cup (4 oz.) shredded cheddar cheese

Preheat oven to 375 degrees Fahrenheit. Place squash halves cut side down into 13 x 9 x 2 - inch baking pan. Bake 30 minutes.

Meanwhile, combine sausage, onion, celery, apple, sour cream, and egg; mix well. Spoon mixture evenly into squash halves.

Return to oven and bake 30 to 40 minutes or until sausage mixture is cooked through and squash is tender. Sprinkle with cheese; bake until cheese is melted, about 5 minutes.
