Original recipe yields 1 serving
1 tsp olive oil
1.5 lb ground Italian sausage (sweet, hot, or both) -- links are fine, just remove from casing
2 Tbsp balsamic vinegar
2 cups chopped peppers (red, green, orange, yellow) -- whatever you have on hand will work just fine
2 medium onions, chopped
2 garlic cloves, chopped
1 can chicken broth
1 can (15 oz.) diced fire roasted tomatoes
1 tsp dry basil
1 tsp dry parsley

In a large deep skillet, heat olive oil. Brown sausage meat for about 10 minutes.

Once browned, stir in balsamic vinegar, peppers, onions, & garlic, & saute for about 5 min.

Stir in chicken broth, fire roasted tomatoes, basil and parsley. Simmer for 10 minutes. Serve with grilled cheese sandwiches or sandwich of your preference.
