Mix crushed pineapple, pudding and mandarin oranges in large bowl. Mix for 2 minutes. Add coconut, then gently fold in Cool Whip or your own whipped cream (whipped heavy whipping cream works best).
Spoon into pie shell.
Refrigerate covered for about 2 hours. Slice & serve.
