Original recipe yields 1 serving
4 yellow crookneck squash, grated
2-3 Tbsp grated onion
2 cups grated cheese (cheddar or Colby jack), divided
1/4 cup grated romano/parmesean cheese
4 eggs, beaten
2 cups milk
1 cup Bisquick mix
Salt and pepper to taste
Sliced tomatoes

Spray 13 x 9 glass pan with cooking spray. Preheat oven to 350 degrees F. Wash squash and then grate removing the ends first. Add grated squash and onion to casserole dish, then add 1 cup grated cheese and all of Kraft romano/parmesean cheese and mix thoroughly.

Beat eggs with milk and add to Bisquick mix and stir till smooth. Pour over mixture in casserole dish and stir slightly. Season as desired.

Cook uncovered for 45-60 minutes or until lightly brown and toothpick comes out clean in the middle. Remove from oven and add the rest of grated cheese to top and add sliced tomatoes and allow cheese to melt and casserole to cool for about 15 minutes. Serve with a fresh salad.
