Original recipe yields 1 serving
1/2 cup applesauce
1/2 cup oil
3 eggs
1 teaspoon vanilla
1/2 cup brown sugar
1/2 cup granulated sugar
3 cups all-purpose flour
1 teaspoon salt
1 1/2 teaspoon cinnamon
1 1/2 teaspoon s baking soda
1 1/2 teaspoon s baking powder
2 cups grated zucchini
1 cup walnuts (chopped)

Preheat oven to 350 degrees F. Coat two 4 1/2-by-8 1/2 loaf pans with cooking spray. Mix all wet ingredients in a bowl, except zucchini. In a separate bowl mix all dry ingredients, except nuts. Combine the wet ingredients with the dry ingredients until mixed well. Add zucchini and then the nuts and mix only until all ingredients are mixed together.

Divide batter between the two loaf pans.

Bake for approx. 1 hour 10 minutes or until a tester inserted in the middle of loaf comes out clean.
