Preheat oven to 350°F. Spray a 9 x 13 pan with baking spray. Combine chopped apples and cranberries in a bowl, toss with lemon juice and set aside. In another bowl, combine flour, baking soda, salt, and cinnamon; set aside. In a mixing bowl with electric mixer, beat eggs with oil, sugar, and vanilla until smooth and well blended. Slowly beat in the dry ingredients until moistened. Stir in the apple-cranberry mixture.
Spread batter in prepared pan.
Bake for 45-55 minute, or until the cake spring back when lightly touched with finger. Cool and cut into squares.
