1 small green pepper
2 Roma tomatoes
1 package (4 oz.) Athenos Garlic and Herb Crumbled Feta Cheese
2 Tbsp Italian seasoning
Salt and pepper
1 Tbsp garlic
4 (1-in) thick boneless pork chops
2 cups flour
2 eggs

Dice red onion, green pepper, and Roma tomatoes. Combine with Feta cheese, seasonings, and garlic.

Stand pork chops on side and cut a "pocket" about 2 inches deep. Stuff with feta mixture. Bread pork chops in flour-egg-flour.

Fry in vegetable oil until golden brown and fully cooked.
