Preheat oven to 425°F. Remove giblets and neck from inside turkey. Butter top and cavity of turkey. Making sure to shove as much under skin as possible. Repeat with salt.
Place turkey in roasting pan. Wrap roasting pan in aluminum foil making a tent so skin doesn't stick.
Cook for 3 hours then take foil off and cook for an additional 15 minutes to let brown. Wiggle legs to check for doneness. If they are loose and juices run clear when breast is poked with a fork, it's done!
