Original recipe yields 1 serving
1 chicken (3-4 pound)
5 garlic cloves
2 bay leaves
2 Tbsp butter, melted
1/4 cup olive oil
1/2 tsp thyme
1/2 tsp marjoram
1/2 tsp oregano
1/2 tsp sage
1/2 tsp basil
3/4 tsp salt
1/2 tsp fresh ground black pepper
Fresh mixed salad greens, if desired
Crusty French bread, if desired

Preheat oven to 425 degrees F. Rinse chicken and pat dry. Split garlic cloves in half and rub chicken skin with cut sides of garlic. Place garlic cloves and bay leaves inside cavity of chicken.

Using a wire whisk, beat together butter, olive oil, herbs, salt and pepper. Place 2 tablespoons of mixture into chicken cavity. Place chicken in shallow baking pan. Brush remaining spice mixture over entire chicken.

Bake, uncovered, for 60 to 90 minutes or until meat is no longer pink near bone when slashed. If desired, serve with fresh mixed salad greens and crusty French bread.
