Cook red beans and rice according to package directions, minus 10 minutes, and replace part of the water with the juice drained from the tomatoes.
In the meantime, heat oil in skillet. Saute onion in oil until translucent. Nickel-cut sausage and add to skillet; cook until lightly browned.
10 minutes before red beans and rice are to be done, add tomatoes, onions, sausage, chicken and shrimp; cover and continue cooking 10 minutes, or until rice is tender. Remove from heat and allow to stand about 7 minutes. Serve with French crusty bread or honey corn bread.
