Original recipe yields 1 serving
1 package refrigerator pie crust
1 lb medium or spicy pork sausage
1 small onion, diced
1 large package cream cheese

Preheat oven to 325°F. Spray 2 mini cupcake pans with Pam (makes about 12-18 cup cakes). Roll out pie crust as per directions on package. Using a small biscuit cutter (approximately 2 inches in diameter), cut out enough circles to fill each space.

Brown the pork sausage in a skillet over medium heat; add onion and continue cooking until tender. Reduce heat to low and add cream cheese. Stir until well combined. Place about a teaspoon of sausage mixture into each crust (a small cookie scoop works great).

Bake in oven about 12 minutes, or until crust browns and mixture is lightly browned. Cool about 7-10 minutes, and remove from pans. Arrange on decorative platter.
