Boil sugar, water and syrup to a hard ball or 248 degrees F, in a heavy 2 quart pot. Remove from heat and add milk and butter. Boil again, stirring constantly to a soft ball or 238 degrees F. Remove and add flavoring.
Sit bottom of pot in an ice water bed that only goes up halfway up the pot (to be careful not to splash water into candy). Beat until almost hard and add pecans that have been well chopped.
Spray a large piece of handy wrap before making candy. Spread hardened candy in a log shape, onto this and roll up and shape till it holds its shape. Let cool before cutting.
