Original recipe yields 1 serving
2 tablespoons oil
1 leftover ham bone with ham scraps
3/4 cup chopped onion
2 rounded teaspoons minced garlic
2 sticks celery, chopped
2 chicken bouillon cubes, crushed
1 lb dried black-eyed peas, rinsed well

Let's Make It

Add oil to large skillet and heat. Saute leftover ham and ham bone, onions, garlic, celery and chicken bouillon. Cook a minute or so.

Place sauteed mixture in a 3 quart heavy pot. Then add peas and enough water to cover the peas about 3 inches.

Bring to a boil then turn on low and cover till done.
