5 eggs
1 cup ricotta cheese
6 pieces bacon, cooked crisp

Preheat oven to 350 degrees F. Thaw spinach and squeeze out all water. Break eggs into a bowl and beat together with spinach, ricotta cheese, and bacon.

Spray pie plate/pan with Pam and pour in egg mixture.

Place in oven and bake for about 35 minutes. Edges will be slightly brown and center of quiche will not jiggle.
