In a large bowl, combine cream cheese, sugar, vanilla, and mix with electric mixer until smooth. Add pumpkin, eggs, cinnamon, nutmeg, and allspice. Continue to beat until smooth and creamy.
Pour into graham cracker crust.
Bake at 350 degrees F 60-70 minutes. Top will turn darker. Remove and cool. Place in fridge. When ready to serve, top with Cool Whip, pecans, gingersnaps, and caramel.
